The Brass Cheese Knife is designed for cutting a wide range of soft to hard cheeses to suit your needs. The stainless steel blade and riveted brass handle are produced in Gifu prefecture, which is renowned for its blade forging and metal casting techniques. The brass handle will develop a rich patina over time to reveal a warm caramel-like colour due to the oxidation process. As a versatile knife, this Brass Cheese Knife can also be used to cut a wide variety of foods in addition to cheese.

Instructions for Care: Hand wash only with warm soapy water. After use, dry thoroughly and store in a well-ventilated area. Do not use with acidic foods as brass and copper products are subject to rust. To remove rust, mix salt and vinegar in equal parts, wet cloth with the solution and apply directly on to rust.
